Boosting Logistic Efficiency of Public Catering Facilities

Master's thesis is devoted to the optimization of the field of Inventory Management companies operating in the catering by improving existing approaches and models of distribution and supply activities of companies, taking into account the specifics of the industry. The aim of the research is to develop a strategy to improve the efficiency of the supply chain in the logistic activities of the companies in the field of catering. Achieving the goal of the research required the solution of the following key tasks: 1. Conduct a critical analysis of existing concepts, models and approaches in the field of inventory management; 2. Improve the methodology for solving the static problem of determining the optimum size of the order party, taking into account risk and uncertainty to increase the effectiveness of the company's activities; 3. To develop the algorithm for choosing the best solutions of the static inventory management problems for companies in the catering in the conditions of risk and uncertainty; The object of research is the logistics company's activities in the field of catering. The subject of research is the strategy of inventory management in catering. The scientific novelty of the research is to improve the approaches to the characterization of the inventory management system for companies in catering taking into account the specifics of products, as well as the conditions of risk and uncertainty. 1. Рresented the static problem, including consideration of the implementation of two cycles and multi-variant of the supply chain in a single purchase; 2. Considered the static problem for different periods; 3. Developed the algorithm for choosing the best solutions of the static problem of inventory management taking into account the specifics of the company in the catering in the conditions of risk and uncertainty; 4. On the basis available sources developed new analytical approach for the solution of the static problem.
