How Brexit Induced Changes in the UK Restaurant Industry
The following paper examines the effects of Brexit on the economy of the UK, particularly on the restaurant industry. Basing on the previous case studies, a queuing theory approach was applied to quantitatively assess the changes in the food service sector in the UK. The M/M/1 model was developed, where the single server was represented by the whole restaurant industry as an aggregate unit, consisting only of the UK leading casual dining enterprises. The analysis showed that if the number of casual dining restaurants falls by 30%, the probability of additional waiting and balking customer costs arise. To prevent the breakdown of the industry, the government should help the enterprises to fill the recruitment gap in the staff appeared by the immigration restrictions, so that the industry could improve its average service rate.
